   This is a super easy 'put it together & come back at the end of the day and eat it'  kind of mealIt was contributed by another one of our customers from the Proctor Farmers' Market.  One of the fun things about this dish is all the condiments you can add.  It's a great way to add fresh vegetables and nibbling on this & that throughout the meal makes every bite a different tasty treat.

Chalupa



Ingredients:

1 pound Pinto beans, dried.

3 pounds Pork Roast (arm, shoulder, sirloin)

7 cups of water.

1/2 cup onion, chopped

2-6 cloves of garlic, minced

1 1/2 tablespoons of salt

2 tablespoons of chili powder

1 tablespoon of cumin

1 teaspoon of oregano

1 4oz. can of chopped green chilies

Corn chips

Various condiments (see below)


Preparation:

Put all ingredients except the corn chips into a Dutch oven or a crock pot. Cover and simmer about 5 hours or until the meat falls apart and the beans are tender.

Uncover and cook about another 1/2 hour until it is as thick as you like it.

*NOTE - If using a crock pot, turn to ‘high’. It will not cook enough on ‘low’.

Serve with corn chips and any other condiments like chopped fresh tomato, sliced avocado, jicama, radishes, chopped scallions, cilantro, shredded cheese, etc.

Makes great burritos the next day!
